For whatever reason, there's not much variation regarding the meats in America's collective diet. Beef, chicken and pork tend to hog the spotlight. Haha, "hog" the spotlight... But why? Why don't we have kangaroo steaks for dinner a couple of times a week? Heck, if it hadn't been for the Sherp offering kangaroo jerky awhile back, I'd still be completely oblivious that people do consume the healthy, lean meat provided by the kangaroo (which is WAY less cute and friendly than in the cartoons).

Czimer butcher shop in Chicago seems to be the only ones other than the Sherp with any interest in broadening our meat horizons. Yak happens to be a sweet and deliciously flavored red meat that's juicier than buffalo, never gamey, and never greasy; not to mention, naturally lean (like kangaroo meat, I might add). Apparently it's healthier than skinless chicken and most fish; why can't we pick this stuff up at our local grocery stores, again?!
